Texas Red Beef Quesadillas

These Texas Red Beef Quesadillas are packed with seasoned mince, melted cheese and just enough heat. Fast enough for midweek, good enough for sharing.

Texas Red Beef Quesadillas

Ingredients

  • 500g beef mince

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 1½ tbsp Texas Red Chili Mix

  • 1 tbsp tomato purée

  • 100ml water

  • 150g grated cheddar or Monterey Jack

  • 4 large flour tortillas

  • Butter or oil for cooking

  • Fresh coriander (optional)

Directions

    1. Gather all ingredients before starting.

    2. Finely dice the onion.

    3. Grate the cheese if not pre-grated.

    4. Measure out the Texas Red seasoning.

    1. Heat oil in a frying pan over medium heat.

    2. Add onion and cook for 3–4 minutes until softened.

    3. Add beef mince and brown fully.

    4. Stir in Texas Red and tomato purée.

    5. Add water and simmer for 5 minutes until thickened. Remove from heat.

    1. Lay one tortilla flat on a board.

    2. Spread beef mixture over half of the tortilla.

    3. Sprinkle with grated cheese.

    4. Fold the tortilla over to seal.

    1. Heat a clean frying pan over medium heat and lightly butter the surface.

    2. Cook quesadilla for 2–3 minutes per side until golden and crisp.

    3. Repeat with remaining tortillas.

    1. The tortilla should be golden brown and crisp. The cheese inside should be fully melted and stretch slightly when sliced. The filling should be thick and warm, not loose or watery.

    1. Slice into wedges and serve with sour cream, salsa and guacamole. Add fresh chilli for extra heat. Ideal for sharing.
