This SPG Roast Chicken keeps it simple and lets salt, cracked pepper and garlic do the heavy lifting. Perfect for Sunday lunch, meal prep or an easy midweek roast.

Ingredients

1 whole chicken (1.5–1.8kg)
2 tbsp olive oil or melted butter
2 tbsp SPG Rub
1 lemon, halved
1 bulb garlic, halved
Fresh thyme (optional)

Directions

Preheat oven to 200°C (180°C fan).
Pat the chicken dry with kitchen paper.
Rub olive oil or butter all over the skin - top and bottom!
Season generously with SPG, covering the entire bird.
Place lemon and garlic inside the cavity.
Roast until juices run clear and internal temp reaches 75°C. This process is anywhere from 60-90 minutes on average.
Serve carved with crispy roast potatoes, seasonal vegetables and proper gravy. Spoon over the resting juices or add it into your gravy for extra flavour.

Recipe Note

Always cook to temperature and not time! All times are given as a guidance only. Insert your instant read meat thermometer into the thickest part of the thigh, and the meatiest part of the breast to get the best readings.

Air Fryer Version

Use a smaller chicken (around 1.2kg). Cook at 180°C for 50–60 minutes.

BBQ Version

Cook indirectly at 180–200°C with the lid closed. Keep flames away from direct contact.

Extra Crispy Skin Tip

Season the chicken and leave uncovered in the fridge for a few hours before cooking to dry the skin further.
