These Al Pastor Pork Tacos deliver juicy, seasoned pork with fresh toppings and warm tortillas. Big flavour with minimal effort.
600g pork shoulder or pork loin, thinly sliced
1½ tbsp Al Pastor seasoning
1 tbsp olive oil
Juice of ½ lime
8 small corn or flour tortillas
½ red onion, finely diced
Fresh coriander
Lime wedges
Pineapple chunks (optional)
Gather your ingredients before cooking
Toss sliced pork with olive oil and Al Pastor seasoning.
Add lime juice and mix well.
Marinate for at least 30 minutes if time allows.
Heat a large frying pan over medium-high heat.
Add pork in a single layer.
Cook for 6–8 minutes until caramelised and cooked through.
Stir occasionally for even browning.
Preheat BBQ to medium-high.
Cook pork on a hot plate or grill pan.
Cook until lightly charred and cooked through.
The pork should be caramelised at the edges with visible browning. The pieces should remain juicy, not dry. The seasoning should form a deep red coating with slight char spots.
Warm tortillas and fill with pork, diced onion, coriander and lime. Add pineapple for sweetness. Serve with salsa and guacamole for a full taco spread.
Spread cooked pork on a tray and roast for 5 minutes to crisp edges.
Swap pork for chicken thighs and cook fully to 75°C.
Serve with Mexican rice and refried beans.
Cook pork in advance and reheat gently in a pan.
