These loaded Al Pastor Nachos are layered with seasoned mince, bubbling cheese and fresh toppings for the ultimate sharing platter.
500g beef mince (12–20% fat)
1½ tbsp Al Pastor seasoning
1 tbsp olive oil
1 tbsp tomato purée
100ml water
1 large bag tortilla chips
150–200g grated cheddar or Mexican cheese blend
½ red onion, finely diced
1 avocado, diced
100g sweetcorn
Fresh coriander
Lime wedges
Sour cream (optional)
Gather your ingredients before starting.
Heat olive oil in a frying pan over medium heat.
Add pork mince and brown fully.
Stir in Al Pastor seasoning and tomato purée.
Add water and simmer for 5 minutes until thickened.
Remove from heat.
Preheat oven to 200°C.
Spread tortilla chips evenly over a large oven tray.
Spoon pork mince evenly over the chips.
Sprinkle grated cheese over the top.
Bake for 8–10 minutes until cheese is melted and bubbling.
The cheese should be fully melted and slightly golden at the edges. The pork mixture should be thick and cling to the chips rather than run thin. The chips should remain crisp underneath.
Remove from oven.
Top with diced onion, avocado, sweetcorn and fresh coriander.
Serve immediately with lime wedges and sour cream.
Build in two layers for more even distribution.
Add sliced jalapeños before baking.
Stir black beans into the mince for extra texture.
Spread mince thinly across chips rather than piling in one area.
