Before you lift it

Position the grill properly first

The ONE.55 is a heavy ceramic grill. Before you start moving it around, choose the final cooking spot and make sure the area is safe.

Surface

Choose a flat, solid base

The grill needs to sit on a level surface that can support the weight of the unit, stand and cooking accessories.

Space

Keep it away from combustibles

Do not position the grill close to fences, sheds, overhanging branches, furniture or anything that could be affected by heat.

Air

Use outdoors only

Do not operate the grill indoors, inside a garage or in an enclosed space. It is an outdoor charcoal cooker.

Moving

Use two or more people

Wear gloves, communicate clearly and take your time. Ceramic grills are heavy and should not be rushed into position.

Your quick physical checklist

Ex-demo BBQ School units may already be assembled or partially assembled, but you should still check the main parts before lighting.

Work through the official guide first, then use this checklist to make sure the grill is positioned, aligned and ready to cook.

Lock the castors before placing or lifting the ceramic body.
Make sure the lower air vent and ash opening face forward and are easy to access.
Check the firebox sections are seated correctly inside the grill.
Place the fire ring on top of the firebox with openings aligned where relevant.
Check the cast iron charcoal grate is seated securely.
Fit the charcoal basket, Smart Grid, deflectors or grates included with your unit.
Check the lid opens smoothly and the top vent is fitted correctly.
Check visible screws, bands and fittings before the first cook.
The main cooking setups

Direct, indirect and low-and-slow

The Monolith ONE.55 can be used for fast grilling, roasting, smoking, searing, baking and longer cooks once you understand the basic setups.

Direct grilling

Cook directly over the charcoal for steaks, burgers, sausages, skewers, wings, veg and fast high-heat meals.

Indirect roasting

Use deflectors to shield the food from direct heat. Great for chicken, pork joints, roast beef, vegetables and family meals.

Smoking and low-and-slow

Use lower airflow, stable charcoal and smoking wood for ribs, pork shoulder, brisket, lamb and longer barbecue cooks.

First cook checklist

Start simple, then go bigger

Your Monolith does not need seasoning before use, but it is sensible to start with a controlled first cook so you can learn how the vents respond.

Load the charcoal

Use good quality lumpwood charcoal. Do not overfill for the first cook. You are learning airflow, not chasing maximum heat.

Light in one or two spots

Let the fire establish gradually. Keep the lid open at first, then close it and control the temperature using the bottom and top vents.

Let any initial odour clear

The cast iron charcoal grate may have a protective coating from storage. Let any odour burn off before adding food.

Cook something forgiving

Start with chicken thighs, sausages, burgers, wings or vegetables before jumping into brisket or a long overnight cook.

Cleaning and care

Keep water out of the inside

Ceramic grills are easy to live with if you clean them the right way. Brush, burn off, empty ash and keep the airflow clear.

Exterior

Use mild cleaner outside

Clean the outside of the grill, stand and side tables with water and a mild cleaning agent when needed.

Interior

Do not wash inside with water

The inside is cleaned by heat, brushing and ash removal. Avoid adding water or liquids inside the ceramic body.

Burn-off

Use high heat carefully

For heavier residue, the official guide describes a high-heat burn-off. Do not leave the grill unattended during this process.

Ash

Empty ash when cool

Once fully cooled, shake loose ash down into the ash chamber and remove it through the lower opening.

Questions before you light it?

A few straight answers for setting up your ex-demo BBQ School Monolith ONE.55.

Does the Monolith need seasoning before use?

No. The official Quick Start Guide states that the grill does not need to be seasoned and can be used immediately after setup. Let any initial odour from the cast iron charcoal grate clear before adding food.

How many people do I need to move it?

Use at least two capable adults, and more if needed. Wear gloves, lock the wheels and take your time. Do not rush moving a ceramic grill.

Can I use it indoors or in a garage?

No. A charcoal kamado must only be used outdoors in a well-ventilated area, away from combustible materials and enclosed spaces.

What should I cook first?

Start with something forgiving like chicken thighs, sausages, burgers, wings or vegetables. Once you understand the vents, move on to roasts, ribs, pizza and longer cooks.

What do I do if something looks wrong?

Do not light the grill. Take clear photos, include your order number and contact Smokey Rebel so we can help check the issue before use.
