These Holy Jalapeño Chicken Quesadillas use the viral folded tortilla method for perfectly sealed, cheesy layers with bold fajita flavour.
500g chicken breast or thighs, diced
1½ tbsp Holy Jalapeño seasoning
1 tbsp olive oil
1 red pepper, finely sliced
1 small onion, finely sliced
6 large flour tortillas
200g grated cheddar or Mexican cheese blend
Gather your ingredients before you start cooking.
Heat olive oil in a frying pan over medium-high heat.
Add chicken and cook until lightly browned.
Stir in Holy Jalapeño seasoning.
Add sliced pepper and onion.
Cook for 3–4 minutes until just softened.
Remove from heat.
Lightly wet one tortilla at a time under running water.
Shake off excess water.
This prevents cracking when folding.
Lay tortilla flat.
Sprinkle cheese on one half.
Add a spoonful of chicken filling.
Add a little more cheese on top.
Fold tortilla in half, then fold again to form a sealed layered triangle.
Repeat with remaining tortillas.
Preheat oven to 200°C.
Place folded quesadillas on a lined tray.
Sprinkle a little extra cheese on top.
Bake for 12–15 minutes until golden and crisp.
The outside should be lightly golden and crisp. The cheese inside should be fully melted and stretchy. The filling should be hot throughout and evenly distributed in layers.
Serve with salsa, sour cream and guacamole. Slice into wedges for sharing. Also works cold in lunchboxes the next day.
Swap sliced beef for chicken thighs for a lighter version with the same bold fajita flavour.
Heat a cast iron pan until very hot before adding the beef to achieve better caramelisation and light charring on the edges.
Stir in fresh chopped chillies or a pinch of chilli flakes while cooking the peppers for extra kick.
Cook beef, peppers and onions together on one tray at 200°C for 15–18 minutes for an easy oven-only method.
