One-Pan Chicken and Potatoes

Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 4 medium-sized potatoes, diced
  • 2 teaspoons Smokey Rebel Greek Odyssey Seasoning

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Directions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes with olive oil, Smokey Rebel Greek Odyssey Seasoning, salt, and pepper. Toss until the potatoes are well coated.
  3. In a large baking dish or a roasting pan, arrange the seasoned potatoes in an even layer. Place the chicken thighs on top of the potatoes, skin side up. Season the chicken with a little extra salt and pepper.
  4. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the potatoes are tender.
  5. If desired, garnish with fresh parsley before serving.
