Ingredients

500g minced beef
400g kidney beans, drained and rinsed
400g chopped tomatoes
1 large onion, chopped
2 cloves garlic, minced
3 tablespoons Texas Red
Salt and pepper to taste
2 tablespoons olive oil

Directions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent.
Increase the heat and add the minced beef, cooking until browned. Drain any excess fat.
Stir in the Texas red, and cook for 1-2 minutes to toast the spices.
Add the chopped tomatoes and kidney beans to the pot, mixing well. Bring to a simmer.
Reduce heat to low, cover, and let simmer for about 30-40 minutes, stirring occasionally. Add salt, and pepper to taste Adjust seasoning By add more if required.
Serve hot, garnished with fresh herbs or toppings of your choice.
