These Greek Odyssey Pork Gyros deliver tender, seasoned pork wrapped in warm pitta with crisp salad and creamy tzatziki.

Greek Odyssey Pork Gyros

Ingredients

    • 600g pork shoulder or pork loin, thinly sliced

    • 1½ tbsp Greek Odyssey seasoning

    • 1 tbsp olive oil

    • Juice of ½ lemon

    • 2 garlic cloves, minced

    • 4–6 pitta breads

    • ½ cucumber, sliced

    • 2 tomatoes, chopped

    • ½ red onion, thinly sliced

    • Tzatziki

    • Fresh parsley (optional)

    Directions

      1. Gather all of your ingredients before you start cooking.

      1. In a bowl, mix olive oil, lemon juice, garlic and Greek Odyssey seasoning.

      2. Add sliced pork and coat evenly.

      3. Marinate for at least 1 hour, ideally 3–4 hours.

      1. Preheat oven to 200°C.

      2. Spread pork evenly on a lined tray.

      3. Roast for 20–25 minutes, turning once halfway through.

      1. Preheat BBQ to medium-high.

      2. Thread pork onto skewers or cook directly on grill.

      3. Cook for 10–15 minutes, turning regularly until cooked through.

      1. Rest pork for 5 minutes.

      2. Slice thinly if needed.

      3. Warm pitta breads.

      4. Fill with pork, salad and tzatziki.

      1. The pork should be lightly charred at the edges with visible caramelisation. The inside should remain tender and juicy, not dry. Internal temperature should reach 70°C. The seasoning should create visible herb flecks across the surface.

      1. Serve with lemon wedges and Greek salad. Add feta for extra richness. Also works sliced over rice bowls with olives and pickled red onion.
