Garlic Butter Mushrooms

These Garlic Butter Mushrooms use simple salt, pepper and garlic to create bold flavour in minutes. Ideal as a steak side, spooned over toast or folded through pasta.

Garlic Butter Mushrooms

Ingredients

  • 400g chestnut or button mushrooms

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 tbsp SPG Rub

  • 1 tbsp fresh parsley, chopped (optional)

  • Squeeze of lemon (optional)

Directions

  1. Clean mushrooms with a damp cloth and trim stems if needed.

  2. Heat a large frying pan over medium-high heat.

  3. Add olive oil and mushrooms. Cook without stirring for 2–3 minutes to allow browning.

  4. Stir and continue cooking until mushrooms release moisture and begin to caramelise.

  5. Add butter and SPG Rub. Toss well to coat evenly.

  6. Cook for another 2–3 minutes until glossy and golden.

  7. The mushrooms should be golden brown with slightly crisp edges and a glossy butter coating. There should be no excess water left in the pan. They should smell rich and savoury, not steamed.

  8. Finish with parsley and a small squeeze of lemon if using.

  9. Serve alongside steak, roast chicken or grilled pork. Spoon over toasted sourdough for a quick lunch, or stir through pasta or creamy polenta for a comforting vegetarian dish.
