1 whole chicken (1.6–1.8kg)
2 tbsp Miami Mojo seasoning
2 tbsp olive oil
1 lemon, halved
3 garlic cloves, crushed
500g baby potatoes
1 red onion, cut into wedges
1 red pepper, sliced
Pat the chicken dry with kitchen paper.
Rub the chicken with olive oil, then coat generously with Miami Mojo seasoning, ensuring the seasoning covers the entire bird.
Place the lemon halves and crushed garlic inside the cavity.
If using vegetables, scatter the potatoes, onion and pepper around the roasting tray and drizzle lightly with olive oil.
Place the chicken on top of the vegetables.
Halfway through cooking, spoon some of the pan juices over the chicken to keep the skin moist and flavourful.
The chicken skin should be golden and crisp.
Juices should run clear when pierced at the thickest part of the thigh.
Carve and serve with the roasted vegetables and pan juices. A fresh green salad or simple rice dish pairs perfectly with the citrus flavours.
Cook the chicken over indirect heat on a BBQ at around 180°C for 1 hour to 1 hour 15 minutes until fully cooked.
Flatten the chicken by removing the backbone and cook at 200°C for around 45 minutes for faster cooking and crispier skin.
Squeeze fresh lemon or lime juice over the chicken just before serving to brighten the flavour even further.
Leftover roast chicken works brilliantly in wraps, salads and rice bowls the next day.
