It’s an easy way to turn leftover chicken or quickly cooked chicken into a crowd-pleasing meal, ready in under 20 minutes.
2 flatbreads or naan breads
2 cooked chicken breasts, shredded or sliced
1 tbsp Cherry Force seasoning
120ml BBQ sauce
120g grated mozzarella
½ red onion, thinly sliced
1 tbsp olive oil
Fresh coriander
Sliced jalapeños
Pickled red onions
If using freshly cooked chicken, slice or shred it and toss with olive oil and Cherry Force seasoning until evenly coated.
If using leftover chicken, simply warm it gently in a pan with the seasoning.
Place the flatbreads on a baking tray.
Spread a thin layer of BBQ sauce over each base. Top with the seasoned chicken, sliced red onion and grated mozzarella.
Bake for 10–12 minutes until the cheese has melted and the edges of the flatbread become crisp.
The cheese should be fully melted and bubbling.
The edges of the flatbread should be crisp and lightly golden.
Some caramelisation should appear where the BBQ sauce meets the chicken.
Finish with fresh coriander or pickled onions for brightness. Slice and serve immediately with a simple salad or slaw.
Cook the flatbread pizza on a preheated BBQ using indirect heat for around 8–10 minutes until the cheese melts and the base crisps.
Add sliced jalapeños or a drizzle of hot sauce before baking for extra heat.
This recipe is perfect for using leftover roast chicken or pulled chicken from previous meals.
Add a light sprinkle of Cherry Force seasoning over the pizza just before serving for an extra hit of flavour.
